The anchor of the São Paulo specialty scene is Coffee Lab in Pinheiros, founded by award-winning barista Isabela Raposeiras, which helped establish Brazilian specialty coffee as a serious international proposition. Quatro Copos, Satélite, and Café Três are among the roasters that have followed with their own distinctive approaches to sourcing and preparation. São Paulo's third-wave cafes tend toward a warmer, more relaxed aesthetic than their Tokyo or Melbourne counterparts — conversation and community are as important as the precise temperature of the pour-over water.
The city's coffee geography is concentrated in Pinheiros, Vila Madalena, Jardins, and the emerging cafe strip along Rua Augusta in Consolação. The CoffeeLab offers cupping sessions and barista courses in English for serious coffee travellers. Given Brazil's extraordinary coffee variety — from the nutty chocolatey profiles of Cerrado beans to the fruity, wine-like naturals of the Sul de Minas — visiting São Paulo without exploring the specialty coffee scene is a missed opportunity. Most third-wave cafes are open Tuesday through Sunday, with Monday closures common.
